Traditional ANZAC Biscuits

INGREDIENTS
- 2 cups rolled oats
- 1 cup plain flour
- ½ cup caster sugar
- ½ cup dark brown sugar
- 1 cup desiccated coconut
- ½ cup golden syrup
- 125g unsalted butter
- 1 tsp bicarbonate of soda
- 2 Tbsp boiling water
METHOD
1 Preheat oven to 160°C. Combine the oats, flour, sugars and coconut in a large bowl and mix well. Put the syrup and butter in a small saucepan and warm until the butter is melted, stir into the oat mixture. Mix the bicarbonate of soda and water and fold in.
2 Place tablespoonfuls of batter onto lined oven trays leaving plenty of space to spread, then bake for 12-14 minutes, until deep-golden. Cool on a wire rack.
